Tiramisu is a classic Italian dessert, great for parties since you can make it ahead of time. In fact, it`s best to let this delectable dessert sit overnight so the flavors all meld together.

This particular recipe uses a mocha element instead of straight coffee and simplifies the baking process by using a mascarpone cream that you don`t need to cook. The result is a layered dessert with a light, creamy texture sure to just melt in your mouth.
Tiramisu is quite filling, so keep the portions small. This recipe makes about 9 servings.

Ingredients for Filling
1 8 oz. container mascarpone cheese, softened
1/2 cup powdered sugar
1 cup heavy whipping cream
1 tsp. vanilla extract
2 tbsp. very strong, sweetened espresso or coffee or coffee-flavored liqueur

Ingredients for Cake
1 tsp. very strong, sweetened espresso or coffee, cooled to room temperature
2 tbsp. coffee liqueur or brandy
approximately 30 ladyfingers
2 oz. dark chocolate, shaved
1/2 cup chopped hazelnuts, toasted
Cocoa powder, optional
Whipped cream, optional

Place mascarpone cheese in a large mixing bowl. Beat until light and fluffy, usually 2 to 3 minutes, scraping the bowl often. Add the powdered sugar, heavy whipping cream and vanilla. Continue beating until the mixture turns into stiff peaks. Gently stir coffee-flavored liqueur or 2 tablespoons of very strong, sweetened coffee into the mixture by hand.

In a small bowl, combine the very strong, sweetened espresso coffee and the coffee liqueur or brandy.

Place half of the dipped ladyfingers into the bottom of an 8-inch-square baking dish, cutting to fit if necessary.

Once the entire bottom of the dish is covered, pour the coffee or espresso mixture evenly over the ladyfingers. Don`t get the ladyfingers soaking wet, because you want them to hold up without breaking. If you get them too saturated, they will quickly disintegrate into a soggy mush.

Spread half of your cream mixture on top of the ladyfingers. Top the cream with 1 ounce of the dark chocolate shavings and 1/4 cup of the toasted hazelnuts.

Place the rest of the ladyfingers on top, then cover with the rest of the cream mixture, the remaining dark chocolate shavings and 1/4 cup of toasted hazelnuts.

Cover the dish and allow to sit in your refrigerator overnight. Sprinkle with more dark chocolate shavings, cocoa powder or whipped cream before serving, if desired.

If you`re out of mascarpone cheese, use the same amount of cream cheese instead, or to lower calorie and fat intake, use ricotta cheese in place of mascarpone.

You can easily make very strong, sweetened coffee by combining 1/4 cup instant coffee granules or instant espresso powder with 2 tablespoons of granulated sugar. Carefully pour 1/2 cup of boiling water over the dry ingredients and stir until dissolved.
